Caution is one thing. Keeping it simple (not just for the industry, but especially for the consumer) is another, and one that is becoming more difficult
Some trends and movements show that there is an audience for less choice (there is a reason In-N-Out Burger is doing so well, jk), yet the rising demand for personalized nutrition drives towards the other side of the spectrum… which will ask even more from the ingredients industry.
Maybe this rant should be long format. What I am trying to say: Research+Trends+Ingredients+Consumers… not necessarily equals something that makes immediate sense.
We as an industry have a hefty task in weighing, liberating, choosing… not only what is intrinsically good right now, but also what proves to good in the future. Sometimes that requires a bit more belly-staring.
